Diabetes-Friendly Recipe: Peanut Butter Oat Cookies

Ingredients

  • 2 cups peanut butter
  • 2 eggs, beaten
  • 2 cups sugar substitute (Splenda, Stevia)
  • 2 cups whole oats
  • 2 tbsp vanilla

Directions

  • Preheat oven to 350 degrees
  • Mix ingredients in large bowl
  • Once thoroughly combined, refrigerate for 1 hour
  • Roll dough into small balls
  • Place dough on baking sheet, 1 1/2 - 2 inches apart
  • Press fork on top of each cookie to flatten
  • Bake 15-20 minutes, or until golden brown
